In 1825, Brillat-Savarin, father of modern gastronomy, wrote his famous “Physiologie du goût” Rue de Grenelle. Home to some of the first “Restaurants” in the city, this neighbourhood evolved from one of the last “wild” areas of Paris where aristocrats liked to hunt rabbits to a paradise of culinary craftsmanship. Away from the beaten paths, between tradition and modernity, this journey will highlight the excellence and passion our culinary artisans showcase in their creations.

What you will taste

You will taste a selection of traditional French products such as brioches, pâtés en croûte, charcuteries... made by state-of-the-art artisans, including world champions and “meilleurs ouvriers de France.” You will also get to enjoy selected cheeses and fish, paired with outstanding wines.  Without forgetting pastries and chocolates. All locally made and farmed by some of the most talented culinary artisans of the country.

What you will see

Home to some of the most monumental architectural creations of the 17th and 18th centuries, this area will offer you a unique vision of Paris. It is the land of private hotels and mansions, political institutions and more generally where the French aristocracy thrived between the 1800s and today.

What you will learn

Our local guides will share their rich knowledge of the French terroirs as well as their history and how it influenced our culture and lifestyle. A deep dive into the slices of life and stories that shaped one of the last areas of central Paris to be urbanised.

About us

Our concept began in 2017 with pastry and bakery classes, imparting the secrets of indispensable French culinary craftsmanship, now universally recognized. We now have three workshops in Paris: in the Marais, Saint-Germain-des-Prés and Notre-Dame de Paris district. Each day, our team of pastry chefs passes on these skills to people from around the world.

Since 2022, we've also opened a literary coffee & kitchen on Rue des Saints-Pères, Saint-Germain-des-Prés district, in a former bookstore, preserving its spirit and ambiance, offering dine-in and take-out options, savory and sweet, blending past and present, here and elsewhere, mindful of our Earth and exploring the flavors of tomorrow.

The verb "fleurer" brings to mind the action of a pastry chef dusting flour onto there table before working the dough... This gesture, both elegant and promising, aptly illustrates our desire to highlight the work and beauties of the human hand, its ability to cultivate, transform, create, sublimate, and pass on traditions, guided by a curious, inventive, and sharp spirit akin to the "fleuret" (the foil in French) of a fencer...
