Designed in the 18th century by the French pastry chef François Pierre de la Varenne, the millefeuille, also known as the "Napoleon," remains a cherished classic of French pastry. Comprising delicate layers of puff pastry and luscious pastry cream, this sumptuous delight won over Europe, gracing the tables of aristocrats and cafes. Though its allure slightly diminished over time, it experienced a resurgence in the hands of contemporary pastry artisans.

Today, the millefeuille stands as an emblem of French pastry craftsmanship, offering a delightful harmony of textures and flavors. Our course invites you to take on the role of a pastry chef, guiding you through the meticulous process of creating your own millefeuille. From mastering the art of puff pastry to crafting the perfect pastry cream, join us on this culinary journey to rediscover and celebrate the timeless elegance of the millefeuille!

All the raw materials are provided. Once the baking workshop is finished, you leave with your creations. We also provide transport packaging.

About us

Our concept began in 2017 with pastry and bakery classes, imparting the secrets of indispensable French culinary craftsmanship, now universally recognized. We now have three workshops in Paris: in the Marais, Saint-Germain-des-Prés and Notre-Dame de Paris district. Each day, our team of pastry chefs passes on these skills to people from around the world.

Since 2022, we've also opened a literary coffee & kitchen on Rue des Saints-Pères, Saint-Germain-des-Prés district, in a former bookstore, preserving its spirit and ambiance, offering dine-in and take-out options, savory and sweet, blending past and present, here and elsewhere, mindful of our Earth and exploring the flavors of tomorrow.

The verb "fleurer" brings to mind the action of a pastry chef dusting flour onto there table before working the dough... This gesture, both elegant and promising, aptly illustrates our desire to highlight the work and beauties of the human hand, its ability to cultivate, transform, create, sublimate, and pass on traditions, guided by a curious, inventive, and sharp spirit akin to the "fleuret" (the foil in French) of a fencer...
