Choux dough is deceptively simple water, butter, flour, eggs but watching it transform in your hands is pure magic. One moment it's a sticky paste in a saucepan, the next you're piping elegant eclairs and golden choux buns like you've done it a hundred times. You'll make three classics from the same dough: eclairs with a glossy chocolate glaze, choux buns topped with craquelin that irresistible crackly crust and delicate profiteroles sprinkled with pearl sugar. You'll prepare your own creme patissiere from scratch and pipe it inside each one. The kind of moment that makes you feel like a real patissier. You'll leave carrying a full box of pastries and the quiet satisfaction of knowing: I made those.
The recipe goes home with you too, your next dinner party just got a lot more interesting.
