The scent of warm butter fills the studio as you fold your first layer of dough. This is lamination the centuries-old technique behind every great French croissant and you're doing it yourself, from scratch. Your chef walks you through the entire journey: kneading, folding butter into dough to create those famous flaky layers, then shaping not just croissants but also pains au chocolat and pains aux raisins. Three viennoiseries, one class, because in a real Parisian bakery, they all come from the same dough. You'll brush on the egg wash, watch them turn golden in the oven, and walk out with a box of still-warm pastries you made with your own hands, and the know-how to do it all again at home.
